Heat the milk in a small saucepan until hot but not boiling.
In a small bowl, whisk the Matcha powder with a few tablespoons of hot water until smooth.
Add the vanilla extract and honey to the hot milk, and stir well.
Pour the milk mixture into a blender, and add the Matcha mixture. Blend until frothy and well combined.
Pour the latte into a mug, and top with whipped cream or frothed milk (optional).
