Ingredients

Pancakes

  • ½ cup old fashioned oatmeal (½ cup = 40 grams)
  • 6 large egg whites (or 12 Tablespoons liquid egg whites)
  • ¼ cup nonfat Greek yogurt
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • 2 packets of your favorite no calorie sweetener like Truvia
  • a splash of vanilla extract

Topping

  • ¼ cup Non-fat plain Greek Yogurt
  • 2 to 3 drops BetterStevia French Vanilla

Instructions

  • To make oat flour, blend rolled oats in a food processor or blender until you achieve a fine, powdery consistency. A small blender, such as the magic bullet, works perfect for an individual batch of pancakes.
    ½ cup old fashioned oatmeal (½ cup = 40 grams)
  • Add the rest of the ingredients and blend again.
    6 large egg whites (or 12 Tablespoons liquid egg whites)
  • Set a small non stick pan to low-medium heat and spray with cooking spray.
    ¼ cup nonfat Greek yogurt, 2 teaspoons baking powder, ½ teaspoon ground cinnamon, 2 packets of your favorite no calorie sweetener like Truvia, a splash of vanilla extract
  • Add ¼ cup scoop of the mixture to the warm pan and cook each side until the edges become solid. About a minute on each side.
  • Make the topping: in a small bowl combine the Greek yogurt and BetterStevia drops.
    ¼ cup Non-fat plain Greek Yogurt, 2 to 3 drops BetterStevia French Vanilla
  • Serve warm, topped with Greek yogurt (mix with your favorite no-calorie sweetener) or your favorite toppings. 

Notes

How many grams in an egg white? egg whites from a large egg equals to 33 grams. For this recipe 6x33 = 198 grams of egg whites.
Note: The batter will be liquidy but don't worry. It makes thin pancakes as they don't have much flour. They're still delicious!
