How To Make Protein Pancakes Without Protein Powder

Protein pancakes without protein powder are quick to whip up and rely on pantry and fridge staples you likely already have. This makes them a great choice for busy mornings or meal prepping ahead of time. Since they come together in one bowl, cleanup is minimal—a win for anyone juggling a hectic schedule.

  • Old fashioned oatmeal (they cook better than quick oats).
  • egg whites. These can be from real eggs or egg whites that come in a container.
  • nonfat Greek yogurt. This helps to add more protein.
  • baking powder, no-calorie sweetener and ground cinnamon.

  1. Start by making the oat flour: blend the rolled oats in a food processor or blender until you achieve a fine, powdery consistency. A small blender, such as the magic bullet, works perfect for an individual batch of pancakes.

  1. Add the rest of the ingredients and blend again until everything is incorporated.

The better is a little liquidy but don’t be concerned. It does work!

  1. Set a small non stick pan to low-medium heat and spray with cooking spray.
  2. Add ¼ cup scoop of the mixture to the warm pan and cook each side until the edges become solid. About a minute on each side.

  • 6 large egg whites (or 12 Tablespoons liquid egg whites)
  • ¼ cup nonfat Greek yogurt
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • 2 packets of your favorite no calorie sweetener like Truvia
  • a splash of vanilla extract

Topping

  • ¼ cup Non-fat plain Greek Yogurt
  • 2 to 3 drops BetterStevia French Vanilla

Instructions

Notes

How many grams in an egg white? egg whites from a large egg equals to 33 grams. For this recipe 6×33 = 198 grams of egg whites.
Note: The batter will be liquidy but don’t worry. It makes thin pancakes as they don’t have much flour. They’re still delicious!
