Roasted Greek Potatoes In Air Fryer

Lemony, garlicky and deliciously Roasted Greek Potatoes that soon will become your favorite to make!

Ingredients

  • 6 Tbsp olive oil extra virgin
  • 4 Tbsp fresh lemon juice
  • ½ large shallot, cut in half
  • 1 large garlic clove, chopped
  • ½ Tbsp dried oregano
  • 2 Tbsp fresh flat parsley leaves, chopped
  • ½ tsp kosher salt
  • ½ tsp fresh ground black pepper
  • 2 large russet potatoes cut lengthwise into wedges

Instructions

  • Preheat the air fryer to 400°F for 5 minutes.
  • In a food processor, add the olive oil, lemon juice, shallot, garlic, oregano, and parsley. Add ½ teaspoon salt and pepper to taste, then puree until smooth.
  • In a large bowl, toss the potato wedges with ¼ cup of the vinaigrette until fully coated. Reserve the rest.
  • Arrange the wedges in a single layer in the air fryer basket, working in batches if needed.
  • Air fry for 18–22 minutes, shaking the basket halfway through, until the potatoes are tender inside and crisp and golden outside.
  • Transfer to a platter and drizzle with the remaining vinaigrette before serving.
