Roasted Greek Potatoes In Air Fryer

These Air Fryer Greek Potatoes are tossed in a garlicky lemon vinaigrette, then cooked until the outside turns golden and crisp and the inside stays soft. Ready in about 20 minutes and so easy!

Lemony, garlicky and deliciously Roasted Greek Potatoes that soon will become your favorite to make! I can’t deny that I love potatoes and the flavor on these make me crave them all the time!

You’ll love the vinaigrette as it could also be used to marinate chicken or other proteins. Olive oil, lemon juice, shallot, garlic, oregano, and parsley get pureed together into something so good you’ll want to spoon it over grilled chicken, fish, or a plain green salad too. Toss the potato wedges in it before cooking, then drizzle a little more on top once they’re done. That double hit of vinaigrette is what makes these taste like something off a taverna table in Greece.

Ingredients

  • Olive oil extra virgin
  • fresh lemon juice
  • shallot, – cut in half (you could also use red onion)
  • garlic clove, – chopped
  • dried oregano
  • fresh flat parsley leaves
  • kosher salt and fresh ground black pepper
  • russet potatoes cut lengthwise into wedges

How To Make Greek Potatoes in the air fryer

  1. Preheat the air fryer to 400°F for 5 minutes.
  2. In a food processor, add the olive oil, lemon juice, shallot, garlic, oregano, and parsley. Add ½ teaspoon salt and pepper to taste, then puree until smooth.
  3. In a large bowl, toss the potato wedges with ¼ cup of the vinaigrette until fully coated. Reserve the rest.
  4. Arrange the wedges in a single layer in the air fryer basket, working in batches if needed.
  5. Air fry for 18–22 minutes, shaking the basket halfway through, until the potatoes are tender inside and crisp and golden outside.
  6. Transfer to a platter and drizzle with the remaining vinaigrette before serving.

Ana’s Recipe Tips

  • Cut the potato wedges close to the same size so they cook evenly and finish at the same time.
  • Pat the wedges dry with a paper towel after cutting, before tossing in the vinaigrette. Less surface moisture means better crisping.
  • Don’t skip shaking the basket halfway through. This is what gets color on all sides instead of just the top.
  • Save some vinaigrette for the final drizzle. A wedge tossed only in the pre-cook marinade tastes different from one finished with a fresh drizzle right before serving.
  • If your air fryer runs hot, start checking at the 15-minute mark so the outsides don’t scorch before the insides are tender.
